Well, it is after seven now on a Friday night, and poor William is slaving away in some obscure corner of the business school here at Brigham Young University with a group, trying to tackle the last part of their HUGE project. I visited their lair just yesterday and brought them a lovely pile of Chocolate Chip Peanut Butter Energy Bites (page 69 of Cooking Through College) to hold them over for the last hour of brain mashing on their accounting project.
About two hours ago I sent William this, “How are things coming? Do you think you’ll be home around 7? Just started dinner…”
All I got in return was, “I’m not sure……..” and then silence.
So I am only assuming that they are all either collaborating heroically on their project or passed out drooling on their desks from lack of nutrition and sleep.
In the meantime, I wanted to post about the dinner we will eat once William gets home. Maybe he will see it on one of his brain breaks and finally acquiesce to his stomach monster's growling requests.
But tonight I made BBQ Rice—well actually I used frozen salmon burgers since we had them, but normally I use chicken. It has four ingredients—rice, chicken (or salmon!), mixed veggies, and BBQ sauce. I probably made it once a week while I was attempting to survive 18 credits and two jobs—so it is fast and easy. Plus, the leftovers taste amazing!

And…while you do that I am going to sit here and eat the leftover Chocolate Chip Peanut Butter Energy Bites and eye my BBQ Rice—should I stick it in the fridge…or will my dear husband be back before it enters the temperature danger zone?
Sigh…I dunno…but these energy bites are sure yummy…
